The Village is set to serve around 13 million meals and snacks, with 60 percent of these being plant-based. The goal is to limit carbon emissions to 1 kg of CO2 per meal, half the amount of previous Olympic Games. The menu will feature more fruits, vegetables, and seasonal, local ingredients, with France sourcing 80% of its food domestically to minimize transportation-related emissions.

Malhotra highlights some challenges athletes might face when transitioning to a predominantly vegan diet:

  • Protein Deficiency: Adequate protein is vital for muscle repair and growth. While plant-based proteins like tofu and lentils are available, athletes may need to carefully plan their meals and possibly use protein supplements to ensure sufficient intake.
  • Energy Levels: Animal products often provide concentrated energy, which can be challenging to replicate with plant-based foods. Athletes need to balance carbohydrates, fats, and proteins to maintain energy levels.
  • Nutrient Deficiencies: There is a risk of deficiencies in iron, zinc, calcium, vitamin B12, and omega-3 fatty acids, all crucial for athletic performance and recovery.

Malhotra advises that athletes transitioning to a vegan diet can overcome these challenges by consuming a variety of plant-based foods, incorporating healthy fats and complex carbohydrates, and using specialized supplements.
